The short version
Four drinks on the P.S. Coffee board never change. Behind them sits a rotating handful that does. That is the whole structure. The menu is proposed and the first Pods have not opened yet, so what follows describes how the two halves are being built.
One version of each drink is not a menu. It is a default.
Walk into most places that sell coffee and the americano comes one way. So does the cappuccino. So does everything else on the board. That is not a complaint, it is simply how coffee menus normally work: one fixed version of each drink, forever.
We build differently. Every drink on our board has an original, and several other ways to have it. That applies across the board, not just to the americano. The cappuccino has versions. The matcha has versions. What is on offer changes. The idea is straightforward: if you are going to drink something five times a week, it should be allowed to stay interesting.
That is the whole reason The Letter and The P.S. exist as two separate things.
The Letter.
The Letter is the board. Four drinks, the same at every Pod, the same every day of the year. If you know what you want, it is here and it is fast.
P.S. Black. Filter, americano, long black. Clean, direct, done. The default, and the fastest thing we make.
P.S. White. Cappuccino, flat white, latte. The one most of you come back for. We know.
P.S. Green. Ceremonial-grade matcha, properly whisked. Not a trend. A second habit.
P.S. Strong. Protein coffee. Twenty grams of protein, same coffee, no compromise on either.
Two sizes on each, small and large. Nothing Italian, nothing proprietary. We would rather you order it without having to think about it.
Every drink on The Letter is specialty grade, ground at every order. Oat milk is available at no surcharge.
The P.S.
The P.S. is what sits behind the board. Everyone else serves one version of each drink. We serve the original and several ways to have it, across the range, and three or four of those ways are live at any given time. This is where things move.
What is on the slate will live on the app, not printed anywhere permanent, because it is not permanent. Past examples give a sense of the range: a longer, softer, milk-friendly americano built for a bad morning. A lighter, sharper, floral one that is not. A twelve-hour cold brew, smoother than you would expect. A double-ristretto cappuccino with less milk, for when you want more coffee in the same cup. A foamier cappuccino built to last a long meeting. A hojicha matcha for people who were sure they did not like matcha.
When something on the P.S. leaves, it leaves. We will not tell you it is coming back if it is not.
Why numbers and not names.
We could have called these drinks something. We did not, and the reason is practical rather than precious.
A name needs explaining. Someone in line behind you does not want to hear the story of why a drink has a particular title before they can order it, and most mornings, neither do you. A number tells you everything you need before you say it out loud: it exists, it is different from the last one, and you can ask for it in three words.
Numbers also do not promise anything. A name suggests a drink is a fixture, something built to last. Some of these variants run for a few weeks and are gone. Calling something No. 3 instead of giving it a story means nobody has to pretend it was always going to stay.
Your usual is safe.
None of this touches The Letter. The four drinks on the board do not rotate, do not get replaced, and do not disappear to make room for whatever is new on the P.S. If your order is a P.S. Black, it will be a P.S. Black next month and next year, made the same way, to the same standard.
The P.S. sits alongside your usual, not instead of it. You can ignore the rotating range completely and never notice it changed. Or you can try whatever is live and go back to your usual the next day. Either way works. The board does not ask you to choose.
